Born and raised in the Bronx, New York, Chef Brion Sawyer’s culinary passion began early, inspired by his grandmother, mother, and supportive ex-girlfriends. His first industry job was at White Castle, but he’s no stranger to hard work, having tackled roles in construction, maintenance, and sanitation before fully embracing cooking. Known for his inventive oxtail dishes, including oxtail pot pie and oxtail Philly cheesesteak, Chef Brion’s personal favorites include simple spaghetti and the richly seasoned curry goat with oxtail gravy from Royal Caribbean Bakery.
